Rodney worked with Target’s product design team to create an assortment that captures the flavors in his restaurant and replicates his signature style of BBQ, with all the sides and fixings in one place — just add meat. We caught up with Rodney to get his recs on how to use the Good & Gather Collabs + Rodney Scott items, along with expert tips that'll inspire at-home cooks and grillers all summer long.
Let’s get your take on some of your new products. What are a few ways to use the seasoning blends?
One example is to sprinkle a blend over your ribs before cooking them. Another is to use it as a finishing spice, say over a cold dish like potato salad or coleslaw. I wouldn’t combine them — I’d use one ingredient at a time to make sure to not have an overwhelming seasoned flavor.
How should we use the Sweet BBQ Sauce and the Tangy Pepper BBQ Sauce?
The Sweet BBQ Sauce is best on smaller proteins like ribs and chicken. The Tangy Pepper Sauce is best on pork, like pork butt, pork shoulder or the whole hog.
Is the Burger Sauce just for burgers?
The burger sauce is not just for burgers. I recommend you use your burger sauce on a cheesesteak sandwich or a pulled chicken sandwich as well. And maybe a turkey sandwich if you want a little spice.
Tell us about the White Sauce. What is it, and how do you recommend using it?
The White Sauce is kind of like a mayo-based sauce. And I would recommend using it on wings or turkey. So you’ll have kind of a tangy, white, slightly sweet sauce that’s great for, you know, that turkey or those chicken wings.
Would you add anything to the snacks and sides in the collection or just serve exactly as prepared?
For the macaroni & cheese I would serve as is. For the cornbread, because I like sweet, I would add a touch more honey butter to it to give it some extra sweetness.
Which product do you think is going to be a surprise star?
The trail mix. When you dip into it and taste it, it keeps you coming back. And it’s the perfect snack that you can always pack and carry with you.
Any personal anecdotes about any of the items in the collection?
The cornbread was something my grandma used to make, and then my mom did as well. And the macaroni & cheese has always been the one side dish that would bring me to the table quicker than anything.
What’s a simple menu for an excellent cookout?
My general tip from years of experience is that you definitely want to do smaller proteins that don’t take all day to cook, like some wings or some hot dogs (of course). You want to do some beans. You want to do maybe steak, depending on the guests that you’re expecting to show up. And some potato salad and coleslaw that you can make ahead of time. And then of course, your drink whether it’s a sweet tea or lemonade or combination of both.
What tips would you give someone trying their hand at BBQ for the first time?
The number one tip is to make sure your coals are hot and ready. Another tip: Don’t be afraid to season your proteins. For example, if it’s a burger, do not be afraid to season that burger a few minutes before you put it on the grill to let it marinate just a touch. And do not be afraid to add more seasoning. Also try to have fun! If you mess up, take mental notes along the way for next time.
