Yummy Spoonfuls Butternut Squash Pasta Mummy

What You’ll Need:
12 oz. old-fashioned egg noodles, cooked
Simply Balanced olive oil
8 sage leaves
1/4 cup diced yellow onion
2 cloves garlic, minced
2 pouches Yummy Spoonfuls Butternut Squash
1 cup Simply Balanced vegetable broth or chicken broth
1/8 tsp. ground nutmeg
1/4 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Candy eyes for decorating

What You’ll Do:
1. Heat 3 tbsp. olive oil in a small skillet over medium-high heat until surface is shimmering slightly. Add a few sage leaves (setting two aside) and cook until crisp, but still bright green, about 30 seconds. Transfer to a paper towel to drain. Season with salt. Set aside.
2. In a large deep skillet, heat 1 tbsp. of olive oil over medium-high heat. Add onion and garlic and sauté until soft, 3-5 minutes. Add Yummy Spoonfuls Butternut Squash pouches. Stir in broth and Parmesan cheese. Season with nutmeg, salt, and pepper. Put on a low simmer.
3. Bring a large pot of salted water to a boil. Cook the noodles.
4. Reserve one cup of the drained pasta. Add the balance of drained cooked pasta to the sauce and stir until pasta is well coated. Chop two of the sage leaves and stir them into the pasta. Serve the pasta with remaining fried sage leaves and additional Parmesan cheese, if desired.
5. With the cup of plain pasta decorate the top of the serving bowl or individual bowls to look like a mummy. Use candy eyes to decorate.
