Hot dog season is officially here—the National Hot Dog and Sausage Council says that between Memorial Day and Labor Day, Americans will consume around 7 billion hot dogs! Rather than stick to old standbys like ketchup and mustard, we’re spicing things up a bit—just in time for summer family festivities!

We asked the Target Test Kitchen to reimagine the classic dog to create a bunch of themed recipes you can try on your grill at home. From blue cheese crumbles to fresh pineapple to baked beans, they’ve cooked up some genius condiment combos that’ll satisfy every hot dog aficionado in the family:

California Dog
