So, March 25 is National Waffle Day? This was news to A Bullseye View – it had our tummies rumbling with thoughts of Target’s grocery aisle and its waffle-icious delights!
While we’re inclined to high-five the waffle just for making it perfectly acceptable to eat ice cream for breakfast, we wanted to briefly touch on its history. The waffles we enjoy today are the modern-day iterations of the Belgian waffle, first created in the 1700’s by the chef to the prince-bishop of Liège. And believe it or not, waffles didn’t catch on in the U.S. until they were introduced at the 1964 New York World’s Fair!
One sweet way to celebrate? Tie on your apron and give the recipe below a go. An easy win from the Target Test Kitchen, it calls for Market Pantry waffle mix and you can also swap in this one, starring blueberries, from Archer Farms.
Blueberry Dessert Waffles
Makes: 8 Servings
What You’ll Need:
1/2 cup sugar
1 tbsp. corn starch
1/3 cup water
2 1/2 cups Market Pantry Frozen Blueberries
1/8 tsp. cinnamon
8 Market Pantry frozen or freshly made waffles
8 scoops Market Pantry Natural Vanilla Ice Cream
What You’ll Do:
Mix sugar and cornstarch in small saucepan. Stir in water. Add blueberries and cinnamon.
Heat to boiling; reduce heat. Simmer 1 to 2 minutes until thickened.
Toast waffles; top with scoops of ice cream. Drizzle with warm sauce.
Tip: Perfect for breakfast, use a dollop of Greek yogurt instead of the ice cream. Sauce is delicious on pancakes or French toast.
