At Target’s Minneapolis headquarters locations, it’s easy for team members to “think green,” right down to their food options. In partnership with Bon Appetit Management Company, each Target café serves an array of breakfast and lunch options that give team members fresh, delicious, healthy food with a low environmental impact.
As part of our Farm to Fork program, Target sources much of its produce and certain meat products locally, from farms and artisans with sustainable practices. This allows us to serve team members meals that are pesticide, hormone, and antibiotic-free, often on the plate within 48 hours of harvest.
All menus include fresh, seasonal, local produce. We focus on organic, additive-free products that include meat from vegetarian-fed and hormone-free cows and turkeys, cage-free chickens and dolphin-safe tuna. The cafes provide a calorie count for most menu items as well as an indicator showing how healthy and nutritionally balanced each dish is overall.
To enhance taste and nutritional value without the help of trans fats, flavor enhancers or MSG, everything is made from scratch, including all sauces, salsas, salad dressings and stocks. Mashed potatoes are made from fresh potatoes. Fresh-squeezed lemon juice is used for cooking and sauces. Breads are baked fresh daily, where possible.
By following a few simple practices, Target has been able significantly reduce its carbon footprint in the following ways: food waste (30 percent), purchase of high carbon foods (beef—33 percent; tropical fruit—50 percent), and air-freighted seafood (90 percent).
“Team member health well-being is a high priority for Target,” says Cara McNulty, Target Prevention and Wellness. “The healthy choice is the default choice in our cafes, and the fact that these foods are also sustainable and delicious just makes it that much better.”
