Apple Streusel Pancakes with Peachy Syrup
Makes 18 pancakes and 2 cups syrup

What You’ll Need

Syrup
1 Tbsp. butter
1 (16-oz.) bag frozen Archer Farms California Peaches
1½ tsp. Archer Farms Cinnamon
1/2 cup Archer Farms 100% Pure Maple Syrup

Pancakes
1 pkg. Archer Farms Apple Streusel Pancake Mix
1 ½ cups milk
¼ cup butter, melted
2 eggs

What You’ll Do

  1. To make syrup, melt butter in large skillet over medium heat.  Add peaches; sauté until softened and hot.  Sprinkle with cinnamon.  Stir in maple syrup; heat.  Serve with pancakes.
  2. Prepare pancakes according to package directions.  Serve with peachy syrup.
  3. Place pancakes on plate, pour on the syrup and prepare for paradise!

Mahi Mahi Mexican Tostadas
Makes 4 servings

What You’ll Need
1 (16-oz) pkg. Archer Farms frozen Mahi Mahi Fillets
Olive oil
Salt and pepper
4 Archer Farms Simply Balanced Whole Wheat Tortillas
4 cups cabbage coleslaw mix
1 cup Archer Farms Fire-Roasted Poblano Ranch dressing
Archer Farms Organic Mango Salsa

What You’ll Do

  1. Heat oven to 375°F.  Thaw fish as directed on package.  Brush with olive oil; salt and pepper to taste.  Bake 20 to 25 minutes until fish flakes easily with fork.
  2. Spray both sides of tortillas with cooking spray and cut into fourths.  Arrange on baking pan.  Heat in oven 10 to 12 minutes until crisp and browned.
  3. Combine coleslaw mix and dressing.  Cut or shred fish into small pieces; stir into coleslaw mixture.
  4. To serve, spoon about ¼ cup coleslaw mixture onto each tortilla wedge.  Top with a spoonful of salsa.
  5. Enjoy the compliments of friends and family at your fiesta!

Maple-glazed Salmon Appetizer Cups
Makes about 24 appetizers

What You’ll Need
1 (16-oz.) pkg. Archer Farms frozen Sockeye Salmon Fillets, thawed, skin removed
1/3 cup Archer Farms 100% Pure Maple Syrup
2 tsp. soy sauce
1 tsp. Dijon mustard
Juice from 1 lime
About 24 lettuce cups

What You’ll Do

  1. Slice salmon on bias into ½-inch slices.  Cut each slice into 2-inch pieces.
  2. Heat broiler.  Coat broiling or baking pan with olive oil; arrange salmon pieces on pan.
  3. For glaze, combine syrup, soy sauce, mustard and limejuice in small bowl; set aside half.  Brush remaining glaze onto salmon.
  4. Broil 4 to 6 inches from heat for 5 to 7 minutes until fish flakes easily.
  5. To serve, place each salmon piece in lettuce cup; drizzle with set aside glaze.  Serve warm or room temperature.  Refrigerate leftovers.
